I remember my grandma doing this, my dad, and my sister. All you do is boil some pasta like rotini or penne, make sure your water is salted properly. Then drain, add back into the pot, open a can of tomatoes (whole, halved, crushed). I used 'O'Organics with Basil. Mix. Then drizzle in some EVOO and serve. So simple. So good.
Buuuut, if you know me you know I can't leave it at that! I found that the canned tomatoes had a bit of a kick (honestly I can taste when tomatoes come from a can) so to bring down the "zip" I added a tiny dash of tamari. I know you'd probably not normally think to add tamari to something more italian, but it works (only if you use so little that you can't actually taste the tamari, you can only taste that something is different). The tamari adds an umami characted to the sauce. Then I chopped up a good handful fresh basil and some slices of bocconcini and through them on top of a bowl of the pasta. I drizzled this with some EVOO and then cracked a bit of sea salt on top and voila! So fresh and delicious!
