Last night The Hubs and I carved two of the three pumpkins we picked up last Monday.
We got our hands dirty but it was all worth it in the end!
I carved the big one and The Hubs carved the smaller one ;)
He carved a cool skull with a spider in it...
...and I carved one with a cat perched on top of a mound of pumpkins!
When we were all finished we lit them up...
...and put them out for all to see!
Then we toasted up the seeds, with my special Ancho Chipotle seasoning...
...and roasted up the carved out pieces!
The Toasted Seeds are sitting on the counter as a healthy snack and the roasted pumpkin was put in the fridge until tomorrow when I hope to make a Pumpkin Risotto with Duck in White Balsamic Reduction! Never cooked duck before so we'll see!! I'm thinking I might just do a couple pieces of duck and then make a duck confit out of the rest served with lingon berries and pickles on croustinis! It's ambitious but I'm excited to go for it!
